Kebabs are an easy and versatile way to add lots of flavour and variety to your menu. The options are limitless. You can add any combination of meat, seafood, fruits and/or vegetables. Ideal for pleasing any palate.

Ingredients:
400g chicken breast, cut into 2cm cubes
1 red capsicum, cut into chunks
1 green capsicum, cut into chunks
1 cup pineapple pieces
8 bamboo skewers
Marinade:
2 tbsp salt-reduced soy sauce
2 tsp minced ginger
3 tbsp honey
1 tbsp sweet chilli sauce
1 tsp sesame oil
Step 1 – Mix all marinade ingredients in a large bowl and add chicken cubes. Cover and marinate in the fridge for at least an hour.
Step 2 – Soak bamboo skewers in water for 20 minutes before using.
Step 3 – Thread the chicken onto the skewers alternating with the capsicum and pineapple.
Step 4 – Cook for 8-10 minutes on a hot barbeque or under a hot grill, basting kebabs with the remaining marinade. Turn every 2-3 minutes.
Tip: I’m a big fan of marinating meat before cooking as it allows the flavours to permeate throughout and keep the meat moist and tender.
