An easy chicken salad that is loaded with protein and fresh ingredients, plus a little taste of the Mediterranean.

500g bbq chicken, pulled
rocket & baby spinach leaves, washed
200g green beans, ends removed & chopped
1 red capsicum, deseed & sliced
1 punnet cherry tomatoes, halved
400g can chickpeas, drained & rinsed
1/3 cup pitted black olives
1/2 cup continental parsley, finely chopped
Simply toss all ingredients together and serve. Or you can top with the olives and parsley for decoration.
• If adding salad dressing, drizzle over the top immediately before serving so the leaves stay fresh.
