Ingredients:

600g chicken tenderloins
3 bacon rashers, diced
2 brown onions, diced
2 garlic cloves, finely chopped
1.5 cups mushrooms, sliced
4 celery stalks, diced
2 red capsicums, deseeded and cut into strips
500ml tomato passata
1/3 cup olives, sliced
1/2 cup red wine
2 tsp italian herbs
2 rosemary sprigs
canola cooking spray

Step 1:  lightly spray a large frying pan with oil and warm up over medium heat. saute onions and garlic for 1 minute until fragrant, then add chicken and bacon pieces. cook 3-4 minutes stirring often.

Step 2: next, add mushrooms, celery, capsicum strips and sprinkle with italian herbs. mix in tomato cooking sauce, olives and red wine. add rosemary sprigs and season to taste with cracked pepper. place lid on top and simmer on medium-high heat for 3-4 minutes or until chicken is cooked through.

TIPS:
• garnish with fresh basil and/or parsley and serve with steamed green beans.
• tenderloins can be swapped for diced chicken breast. tenderise the fillets with a meat mallet for an even thickness before dicing.
