This is a simple one-pot meal that takes minutes to prepare and can be left cooking while you get on with your day. How nice to return home after a hectic day to a wholesome, home-cooked hot meal.

Ingredients:

700g chicken breast fillets, diced
4 baby potatoes, washed
400g butternut pumpkin, peeled and cut into chunks
2 carrots, sliced
2 brown onions, sliced
4 celery stalks (inc leaves)
250g button mushrooms, sliced
2 tsp dried mixed/italian herbs
400g can Roma tomatoes
2 tbsp salt-reduced soy sauce
1/2 cup chicken stock
rock salt & cracked pepper

Step 1 – Place all vegetables into a slow cooker and add chicken on top.

Step 2 – Mix together canned tomatoes, soy sauce, stock and herbs, then pour over chicken and vegetables. Season with salt & pepper.

Step 3 – Cover and cook on low for 6+ hours until the vegetables are tender and chicken is cooked.

Tip:
• Garnish with chopped parsley leaves and fresh cherry tomatoes.
