when tofu is seasoned or marinated then cooked, it takes on another life creating a new taste sensation of its own.

Ingredients:
300g tofu, cut into 1cm cubes
1 tbsp curry powder
1 tbsp smoked paprika
2 tbsp onion flakes
Step 1: pre-heat oven to 190°C and line a baking tray with baking paper.
Step 2: prior to cooking, wrap tofu in 4-5 sheets of thick absorbent paper. place something heavy on top (ie. heavy pan or pot) for approx 5-6 minutes which will help press out/remove excess moisture. unwrap and cut into small cubes.
Step 3: place tofu into a large zip lock bag then add curry powder, paprika, onion flakes and season with salt. shake gently to coat the tofu.
Step 4: spray a large non-stick frying pan with oil and heat over high. once hot, add the seasoned tofu, sauté for 4-5 minutes until a slight crust has formed on each side and begun to turn golden-brown.
Step 5: transfer tofu cubes onto the baking tray and bake for 10 minutes or until the tofu has begun to dry out and crisp up.
TIP: the longer the tofu bakes, the more firm and crispy it will become.
