Not only does this recipe make for a fabulous dessert on a cold evening, but it also doubles as a delicious, nutritious breakfast with yogurt. It is a perfect post-work out meal, add some low-fat yogurt to increase the protein amount per serve.

Ingredients:

4 firm pears, cored and cut into wedges
200g mixed berries
1/4 cup sultanas
1 tsp orange rind, grated
2 tbsp honey
1/2 tsp ground cinnamon
1 cup toasted muesli
1 tbsp flaxseed meal

Step 1 – Preheat the oven to 180°C.

Step 2 – Spray an ovenproof dish with canola cooking spray and place pears, mixed berries, sultanas and orange zest into the dish. Drizzle honey over the top and sprinkle with cinnamon. Cover with foil and bake in the oven for 30 minutes.

Step 3 – Remove foil and top with the muesli. Return the dish to the oven and bake for another 10 minutes.

Step 4 – Plate up and sprinkle with flaxseed meal for a delicious, nutty taste.

Tip: When refrigerated this recipe will keep for 3-4 days. Or portion into small containers and freeze.
