This dressing is an indispensable part of my cooking repertoire. It goes on nearly everything I eat. I would best describe it as a thick aromatic vinegar with a sweet, tangy bite. As well as a salad dressing, it’s a perfect marinade as well as a sauce for plant-based meats and rice/quinoa dishes.

Ingredients:

1/2 cup balsamic vinegar
1/2 cup lemon juice
1/3 cup extra virgin olive oil
3 tbsp maple syrup
2 tbsp salt-reduced soy sauce
2 tbsp sweet chilli sauce
1 tbsp dijon mustard
2 tbsp wholegrain seeded mustard
1 garlic clove

Place all dressing ingredients into a screw top jar and shake until they are emulsified. Alternatively whisk all ingredients together.

Tip:
• Keep well refrigerated and this dressing will last up to 3 weeks.
