red pitaya, commonly known as dragon fruit is the star ingredient of this dish. the vibrant, ruby red flesh has a beautiful sweet taste and texture, and really complements the earthy, sweet flavour of the baby beets. enjoy it for breakfast or as a dessert.

Ingredients:

4 ready to eat baby beets, drained
1.5 cups mixed berries
1 pear, cored & diced
1/2 pitaya (dragon fruit), peeled
1 tsp fresh ginger, grated
1 tbsp apple cider vinegar
170g tub yoghurt (flavoured or plain)
vanilla protein powder

Step 1:  combine baby beets, mixed berries, pear and grated ginger in your blender. pulse blend on high until smooth.

Step 2:  add the flesh of the pitaya to the blender (use a spoon to scoop out the flesh), then add yoghurt, and vinegar. place lid on top and blend well to combine. serve/store in bowls or jars.

Step 3:  when ready to eat, stir in ½ scoop (15g) of vanilla protein powder per bowl/jar. (protein powder will lose its health benefit if not consumed straight away.)

TIPS: 
• top with goji berries, walnuts, chocolate and/or flaxseed meal.
• garnish with mint leaves, strawberries or goji berries.
• can be refrigerated but best eaten in 1-2 days.
